It takes its name from the grape variety: Moscato d'Asti, a unique wine in the world and the pride of our Asti region.
GRAPE VARIETY: This is the ancient Moscato Bianco of Piedmont, already known in Roman times. The vineyards, located in well-exposed hillsides, have a planting density of approximately 5,000 vines per hectare, with a grape yield of 90 quintals, equivalent to 63 hectoliters of wine.
SOIL: Sandstone origin with a significant presence of limestone mixed with tuff, hilly location at an altitude of approximately 350 meters above sea level.
TRAINING SYSTEM: Guyot
HARVEST: The harvest is done by hand during the first half of September, when the juicy, ripe grapes take on a beautiful antique yellow-gold color.
VINIFICATION: The harvested grapes are immediately subjected to a delicate, soft pressing, and the resulting must is chilled in cold storage to prevent unwanted fermentation. This ensures that the grape's aromas are preserved. The must is then transferred to temperature-controlled steel autoclaves where it is heated to 20°C and fermented with the addition of selected yeasts, thus converting the sugars into alcohol. Once the alcohol content reaches 4.5-5%, fermentation is stopped by chilling to -3°C to achieve the perfect balance between acidity, sugars, and alcohol. Sterilizing microfiltration eliminates any remaining yeasts, and the pure, fresh wine is then ready for bottling.
AGEING AND STORAGE: This wine, due to its unique characteristics—sweetness and strong aromatic sensations—does not require long aging and can be consumed immediately. In particular, the Sant'Antonio wine retains a fragrant and persistent bouquet even after a year of aging.
SENSORY CHARACTERISTICS: Bright straw yellow color with delicate greenish reflections. A delicate white foam develops into a very fine and persistent perlage. Aromatic, floral, and fruity bouquet. Pleasantly sweet and fresh thanks to the moderate alcohol content and balanced acidity, it is smooth and rich with musky notes typical of the Moscato grape. The aromatic persistence is very long and intense.
ALCOHOL CONTENT: 5.5% vol.
SERVING AND PAIRINGS: To best appreciate its extraordinary bouquet, we recommend serving it in a classic crystal glass at a temperature of around 9-10°C. A dessert wine par excellence, it pairs magnificently with all baked goods. It pairs beautifully with fresh pastries, filled cakes, fruit tarts, and soft desserts. A splendid conversation wine, easy to serve, it brings a joyful sense of elegant simplicity and freshness to the table. Traditionally, it's also ideal for a mid-afternoon break.
