GRAPE VARIETY: Moscato Bianco del Piemonte
HARVEST: Winter, from December to January, depending on climate and weather conditions, when temperatures drop below -5°C. The grapes are completely frozen but not botrytized.
VINIFICATION: Pressing of the still-frozen grapes using a small vertical hydraulic press, with an approximate yield of 3-5%, followed by fermentation of the must alone in a small steel tank. Spontaneous cold stabilization.
SENSORY CHARACTERISTICS: Intense amber color with orange nuances. Excellent light reflection due to the high acidity. Extra rich in complex, easy, and pleasant aromas, from the distinct hints of tea, apricot, and raisins, to peach syrup, dried figs and dates, paprika, and tamarind, finishing with a long finish of fresh, caramelized rhubarb and quince jelly.
ALCOHOL CONTENT: 13% Vol.
SERVING SUGGESTION AND PAIRINGS: Its class makes it intriguing and imaginative when enjoyed with dark chocolate. It's particularly interesting with sushi or, at the end of a meal, with aged and blue cheeses such as Italian Gorgonzola, French Roquefort, and English Blue Stilton, but more generally with all cheeses. Also excellent with foie gras.
